Ingredients 

For the Chicken

  • 1.5 pounds boneless, skinless chicken thighs or breasts cut into bite-size pieces

  • salt and pepper to taste
  • 1 tsp garlic powder

For the Mango Glaze

  • 1 ripe mango peeled and chopped, or use 3/4 cup mango purée
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar or lime juice
  • 2 garlic cloves minced
  • 0.5 tsp fresh grated ginger
  • 0.5 tsp chili flakes optional, adjust to taste
  • 1 tsp cornstarch mixed with 2 tablespoons water for thickening

For Serving (optional)

Instructions

  • Blend the chopped mango until smooth in a blender or food processor to create the mango purée for the glaze.
  • Combine the mango purée with soy sauce, honey, rice vinegar, minced garlic, grated ginger, and optional chili flakes in a small saucepan.
  • Simmer the glaze mixture over medium heat for 5-6 minutes to deepen the flavors, then stir in the cornstarch slurry to thicken for 1-2 minutes before setting aside.
  • Season the chicken pieces with salt, pepper, and garlic powder, then heat oil in a large skillet over medium-high heat.
  • Cook the chicken for 6-8 minutes, flipping occasionally, until golden brown and fully cooked through.
  • Reduce the heat to low, pour the mango glaze over the cooked chicken, and toss to coat evenly, simmering for 2-3 minutes to caramelize.
  • Serve the glazed chicken immediately over warm rice or noodles, garnished with green onions, sesame seeds, fresh herbs, and lime wedges.
