  • 1/4 tsp liquid monk fruit up to 1/2 teaspoon, adjust to taste
  • 1/2 tsp vanilla extract
  • 1 tbsp vanilla pudding mix regular or sugar-free instant pudding
  • 1 cup frozen whipped topping thawed, light or sugar-free
  • 1.5 tbsp sprinkles optional

Instructions

  • Whisk together Greek yogurt, liquid monk fruit, vanilla extract, and vanilla pudding mix in a large bowl until completely smooth and well combined.
  • Gently fold in the thawed whipped topping using a spatula, being careful not to deflate the mixture, until just incorporated.
  • Fold in sprinkles if using, then taste the fluffy yogurt and adjust sweetness by adding more liquid monk fruit if desired.
  • Serve immediately for a creamy texture, or refrigerate covered to allow the fluffy yogurt to thicken slightly before enjoying with graham crackers, fruit, or on its own.
