Ingredients

  • 10 large eggs
  • 2 cups cottage cheese
  • 1 1/2 cups shredded cheddar cheese or your favorite cheese blend
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano optional
  • 1 cup fresh spinach chopped, optional add-in
  • 1/2 cup bell peppers diced, optional add-in
  • 1/2 cup cooked chicken ham or turkey bacon diced, optional add-in

Instructions

  • Preheat your oven to 350°F (175°C) and generously grease a 9x13-inch baking dish to prevent the casserole from sticking.
  • Crack all 10 eggs into a large mixing bowl. Whisk vigorously until the yolks and whites are smooth and fully combined to create a light, airy base.
  • Stir the cottage cheese into the whisked eggs until the mixture is creamy and well-integrated. This is the secret to a moist and tender casserole.
  • Incorporate the shredded cheddar cheese, salt, black pepper, garlic powder, onion powder, and optional dried oregano. Mix thoroughly to ensure the seasonings are evenly distributed.
  • Fold in any optional add-ins you desire, such as chopped spinach, diced bell peppers, or cooked ham, stirring gently until they are evenly mixed throughout the egg base.
  • Pour the entire egg mixture into your prepared baking dish. Use a spatula to spread it into an even layer for consistent baking.
  • Bake for 45 to 55 minutes. The casserole is done when it's golden brown on top, the edges have pulled away slightly from the sides, and a knife inserted into the center comes out clean.
  • Remove the casserole from the oven and allow it to cool for at least 5 minutes. This helps it set for perfect slicing. Serve warm and enjoy.
